Oregano


Oregano is another very easy plant to keep healthy. Sun, well draining soil and being stingy on the fertilizer will guarantee it. Truly no trick to these herbs. If you have very good conditions, Greek Oregano, O. vulgare, can almost be invasive, depending on your point of view.

What Italian dish isn't enhanced by some Oregano. Experiment with all the different varieties. This plant is highly variable in flavor. Even vegetatively propagated plants vary with the soil conditions. Have a good time with this.

Oregano contains the powerful antiseptic Thymol which will ease the pain of a toothache.

Greek Oregano Plant

Add this to any red sauce and you can call it a meal. Please keep this plant in a pot as it is a very enthusiastic grower. If you would like an herb with less invasive growth buy the Italian Oregano.

Italian Oregano Plant

The aromatic leaves of this tender perennial have a milder scent and flavor than the Greek variety. Think pizzas, red sauces and bouquet garni. Also known as French or Pot Marjoram, this savory culinary herb is noninvasive and bears pinkish purple summer flowers attractive to butterflies. Grows to 18" in height.

 

Chicken Oregano with Garlic and Tomatoes

INGREDIENTS:

3 to 3 1/2 lbs chicken breast pieces
3 to 4 tablespoons extra virgin olive oil
1/2 cup chopped onion
1 clove garlic, minced
2 fresh regular or 4 plum tomatoes, diced
4 ounces sliced mushrooms
1 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh chopped oregano, or 1 teaspoon dried crumbled oregano.

PREPARATION:

Heat oil in a heavy skillet; add chicken and brown over medium heat. Add onion and garlic; cook for 3 minutes. Add remaining ingredients. Cover and cook over low heat for 30 to 40 minutes, until chicken is tender and juices run clear. Serves 4 to 6.
